Try leaving them till last Highland. You'll enjoy the dinner more, but the Brandy Sauce won't have a cat in hell's unless it's at least 80% proof.

True story
A few (not many) years ago I sent my wife for some brandy butter to go with the Luxury Christmas Pud I had obtained from M&S..!
I asked her (thankfully) a couple of days before Christmas where it was she said, "In the fridge door at the top"
After looking, moving jars etc I asked to show me.
She picks a jar our all smug like..!
It was Tartare Sauce!!
She's better in other departments than the kitchen!!
