I can't really choose between the two, but battlefield is more realistic as an actual warzone

For MP BF3 >>>>>>MW3, single player MW3 gets its, but that cos BF3 is MP with SP bolted on and vice versa for MW3.
As for tips a good starting soldier is engineer - i feel he is the most versatile. Decent guns and RPG for tanks/dug in soldiers.
Though depends very much on how you like to play.
You will find different maps throw up different circumstances and how you want to play - eg caspian borders is good for snipers but Metro is not so good.
On a slight side note - learn to fly in the coop missions (people can be really stupid in games so having a friend help you learn to fly is great)

I have been using Engineer class. One thing i've noticed is the recoil is hard to handle. What is best for stopping this?

Have a go with the M4 as this is semi automatic rifle (it fires only 3 bullets at a time) this means u need to keep tapping the fire button but this should reduce recoil. Also just carry on playing the game and you will get some accessories to help with the recoil, but choose the gun you enjoy the most.
Also have a quick read thru this:
