Trying a new burger place tonight. Got Nduja on it

Yes mate, I do batches of base gravy (stock ad you say) and freeze them. I also pre cook my chicken and freeze in batches as I tikka it.
Iv only managed to 2 curries so far, vindaloo and a garlic chilli chicken. To be fair, a vindaloo is very very easy providing you have the gravy prepared and the right spices etc.

The caramelisation is the key, as you say. Only difference with me is, all the proper chefs use a metal chefs spoon but iv starts using the one of those like rubber ones as it scrapes everthing perfectly better than a metal spoon for me anyway .

Wooden spoon with a right angle sharp edge. Hard to find but well worth the effort.
