Trying a new burger place tonight. Got Nduja on it

Unfortunately it's not arriving for another 30 mins so will likely watch the first 15 before joining the missus.

I had a Wimpy delivered last weekend. Haven't had one for donkeys. Nearly 40 notes! Only for me and the wife. Went down well, thought it was a bit steep...

What's everybody else having for dinner?

Homemade vindaloo BIR style. Already had the chicken tikka prepared and the base gravy ready.

Now on a few beers but got to be up early for my teams football training so won't go to mad

Burgers aren't really my thing but we've had Birdbox delivered a few times and rated it

Yes mate, I do batches of base gravy (stock ad you say) and freeze them. I also pre cook my chicken and freeze in batches as I tikka it.

Iv only managed to 2 curries so far, vindaloo and a garlic chilli chicken. To be fair, a vindaloo is very very easy providing you have the gravy prepared and the right spices etc.

The trick is to use an aluminium pan without non stick to scrape all the caramelised spices back into the sauce.

I'm betting I don't even have to tell you that

No you don't haha - you seem to understand too. I only learnt from YouTube to be fair, people like Misty, Al, the curry guy, Julian Voigt etc.

The caramelisation is the key, as you say. Only difference with me is, all the proper chefs use a metal chefs spoon but iv starts using the one of those like rubber ones as it scrapes everthing perfectly better than a metal spoon for me anyway .

Wooden spoon with a right angle sharp edge. Hard to find but well worth the effort.
