I like a bit of crunch to my chips, not all the way through, but the outside needs to be crispy - dipped in mayonnaise and sweet chilli sauce mixed together

Crispy on the outside, fluffy inside. Some salt and loads of vinegar.

See I like vinegar, but I've stopped using it recently as it makes the crispy chips a bit soggy.
Salt, vinegar, brown sauce.
Peanut sauce is great on a boiled potato, but I can't imagine itd be great with chips
I normally just have ketchup, enjoy a nice curry sauce though, and i dont mind mayo but wouldnt be my first choice

On holiday usually.
I hardly ever eat chips. Never really have done. The only time I tend to eat chips is occasionally if I'm sat having some pub grub or when I'm on holiday abroad. I never eat chips at home.
Perhaps this isn't the thread for you then
HP Sauce at home unless the chips are accompanying fish then it's salt and vinegar

a) I prefer them to be thin and crispy, fries I guess.
b) mayo
I had some fries in Amsterdam with rosemary salt, they were amazing.
Although I don't know the last time I had chips, on a trip to Maccies hungover I suspect.

Even worse when it's mashed with cinnamon or that awful yank dish when it's topped with marshmallows
