I would think the opposite for the simple reason that CB's need time to work together. Kos - Rob wasn't that bad against Leicester so I would stick with that.
It would be a big risk to put Mustafi who would have had something like 3 training sessions with the team.
Perez on the other hand has been there since his move so although he hasn't train much alongside Ozil and Sanchez, he would have with the rest of the team. And a "mistake" from him wouldn't be that costly.

I think Mustafi should start - Holding wasn't intended to be a starter so soon and should be nurtured a bit before being thrown in.
Perez will probably come on as an impact sub as many new strikers do for their debuts.
There is an argument that it's good for a player's development to not punish them for good performances. We know there's a degree of security with Rob Holding. He's not like Chambers, who was educated as a right back and didn't truly have any experience. Holding was excellent in the Championship.
Giroud to start and Perez to come on during the match.
Mustafi will start surely. You don't spend £35m on a player and start with a kid, however well he has been playing.
It will be very interesting to see how the forward line develops with alexis, Giroud and Perez about. An interchangeable front three is clearly wengers ideal. Alexis, theo and Perez would be a fearsome frontline if they are all on form.

They will never all be on form. We are THE Arsenal after all.
What it will do however, is stop us being overloaded in midfield by the oppositions as they will no dare to play high line.

Ramsey can be a good player when a side is built to get the best out of him. He is like one of those starmen at a midtable club, they look good when the team is built around them but as soon as they move to a bigger club they are just another player and they don't adapt.

I think Chamberlain will be dropped and Alexis moved back to the left to account for Giroud. Wenger may throw a curve ball in though and start Perez. It's nice to have real options right across the park.
Mustafi has to start if he's match fit.
Will no doubt put a hex on us but I can't see Southampton being any trouble. The only doubt is that following an international break the big teams can tend to struggle (naturally as they lose more players).
