And why was that? Because we only had the useless Gabriel (a Wenger signing) to replace him, who every man and his dog knows isn't good enough.

Different line-up, different tactics.
Same defence
Ox, Xhaka, Elneny midfield
Welbeck Giroud Sanchez up top
Sit back and release pressure by playing long balls up to Giroud. Full backs stay back the whole game to stop Robben/Costa getting down the wings.
Welbeck and Sanchez outwide doing mostly defensive work.
Keep it tight. Maybe get a goal on the break but concentrate more on the simple things... not giving Lewandowski free header, not letting Robben cut inside his marker, etc.
2-1 would have been a fantastic scoreline but as soon as Koscielny went off we capitulated because our other players are either not good enough or mentally weak... either one is the managers fault and he has to take the blame.

In terms of team selection, I don't know if there's too much that could have been done differently. Personally, I would have preferred to drop Ozil, put Sanchez in the hole, and put Welbeck up front, but I really doubt that would have made a difference on the end result.
But the underwhelming options available is largely symptomatic of Wenger's transfer activity over the past few years.
For example, I've been crying out for us to sign an actual left-winger for years now (even when Sanchez was doing well there, it's clear it wasn't his natural position). And yet we still have no-one who looks comfortable there. It's pretty much a choice of play a striker down the wing (Perez or Welbeck) or play Iwobi, who, with the greatest of respect, I've never really been convinced by (he's not a particularly good dribbler, his passing is very erratic, and his defensive work leaves something to be desired).
This is just one example, but if you look around the squad, there are so many positions that could have quite easily been improved over the last few years with a bit of planning.
Then there's also the complete lack of organisation. Our pressing is pretty laughable. The commentators seemed to imply Sanchez was the only one pressing, but it's not true; every player pressed at some point; it's just that they never did it as an organised unit.
There was one point where Chamberlain chased around in a circle as 4 Bayern players basically played piggy in the middle with him, whilst every other Arsenal player was just stood there. After he got gassed, Sanchez was the next player to try and single-handedly press their entire defence.
It's absolutely pointless pressing if you don't do it as a unit; you need to not only close down the man with the ball, but also cut off his passing options. Whilst it looks noble, having one guy chase down 3 or 4 players is simply a waste of energy.
Be careful what you wish for... we might get decent tactics for once.
In response to a couple of points.
Gabriel was a problem. After we signed Holding and he played his first game I said I like the look of him and want to see him get a chance. That hasnt happened and our first choice back up defender is just too easy to outplay by a decent team.
Xhaka is not good enough so playing him in midfield is always going to cost us. I did an article months ago pointing out his lack of pace makes it easy for players to go past him and he needs too much time on the ball to pick a good pass, you dont get that in modern football.
And playing Giroud is never the ansewer. Again too slow and the myth of him being good at holding the ball up has been proven to be false. You just watch every time he gets the ball and count how many times he holds it and loses it.
Two or three of them together on the pitch and our spine lacks quality. there is also an issue with them and the other players last night that there is no evidence of real leadership on the pitch. What I would give for a Vieira type player now. Big, strong and a real leader.
what a bitter OP is. He's a club legend who's gonna leave one of the most attractive manager jobs in world football
