I'll give you the vague answer
The guitar roadie obvs has them all set up for him...pick-ups, tone etc for each song.
Many songs are recorded with several guitar tracks layed over one another but the main sound needed for a particular song can be set up on the one guitar so the 'fan' recognises it...even if its far removed from the original recordings......
And yeah as others have said.....songs can have diff tunings....a semi-tone down or up for example.....
