It takes me (though I walk fairly quickly) about fifteen/twenty minutes to walk from White Hart Lane to Seven Sisters. It shouldn't take more than half an hour, its only about a mile so its not too bad, and the crowd tends to thin out so its not a huge problem normally at Seven Sisters either.
I never leave early (paid for the ticket, so Im getting full value for money), and I have to travel back to Waterloo/Vauxhall and the Victoria Line to Vauxall takes about half an hour as well.
The tubes are fairly regular as well, I think at most something like 7 mins apart, but thats just a guess, you never have to wait too long. The Victoria Line I think is one of the quickest.
Im Wimbledon way and I'm normally home before midnight, the journey home takes something like an hour and a half.
Depends on which station you are leaving from, but if you don't muck about after the game, there is no reason why you shouldnt be at Seven Sisters around half 10 for an 8pm kick off.

Bibbly, my guess would be that he wants to see a team on the up, rather than go to the museum at SB
I usually hang around at the ground until it's fairly empty which is only about 10-15 mins before walking to seven sisters. I always seem to then get straight on a tube or train no problems
Mafiaboy usually hangs around at the toilets looking for mandates.

Bakerloo from Oxford Circus to Waterloo takes less than 10 mins.
Victoria line from Seven Sister to Oxford Circus 15 mins.
Victoria line is the THFC (superior) of all tube lines in speed.
Trains from WHL to Seven Sisters take 5 mins. Run every 15 mins saturday / weekend evenings. Usually 2-3 mins later on the timetable due to match crowds.
So work backwards from your "last train" at Waterloo, and the above, to work out how quickly/leisurely you can get to Seven Sisters (walk/bus/train) .

Depending on weather etc, I reckon jumping on any bus that passes by (149/259/279 etc) to Seven Sisters would be best if you don't have time to walk.

You are going on the same route as me (via Epsom?), its never been a problem to catch the last train out back our way. Pretty sure the last train Guildford way is 23:50 so plenty of time to get from the Lane.
