It just seems a router problem, can't say I had heard of NAT before you mentioned it, best I can offer is another link hope it helps

Moderate seems to be the way to go

Just checked my NAT status and it's set to moderate, my connection seems fine with that.

Forwarding ports to your console is safe yeah.
If you have an option on your router called upnp, enable that too.
Not sure why moderate nat is getting you disconnected though, mines moderate and It's fine.

Is your internet ok, no disconnects?

What make is your router ?
