I’ll get this out there good an early….I love my dinner. Love cooking it, love sitting down to eat it with a drink, love packaging it up into Tupperware for leftovers. Exploring the fridge to see whats been hiding out is a great wee hobby.
What I want to know is if we have any budding Chefs out there? Do folks generally prepare a good meal from scratch, or close to? Or is take out or a frozen meal more your thing?
Inspire me with your recipes.
This weekend, we stayed home mostly (sick baby) so I took the opportunity to make a shed load of food. An afternoon in the kitchen with a few beers and the stove helped lift the gloom of $hitty football results.
Had loads of San Marzano tomatoes, so made a huge pot of pasta sauce. Made some meatballs, made an eggplant parm. All nicely in the fridge ready for me to tuck into.
Also made a shrimp vindaloo. Nothing fancy, onion, garlic, paste, shrimp, tomato. Added a bit more heat to it as I like the fire.
Got some Vietnamese style thin pork chops marinating as we speak. Also some chicken in a lemon, garlic, curry, greek yoghurt sauce thing that’ll make nice skewers.
And there is always Big Salad Night. This week, when the avocados are just right, we will have Cobb Salad.
Yum. That should keep us going for a while.

Spent the afternoon shifting the snow, so it's comfort food night tonite.
Got a Mac n smoked cheese, collard greens on the go and will throw together some butter milk fried chicken later.
Having a nice double IPA and a nice sit down right now

About 6" here. Heavy wet stuff, but yknow, snowblower.
Day care was closed so had to take a personal day too. Not bad though. We had a 2hr nap together

Been really into smoking meat on my wee $hitty charcoal grill. Low low heat, wood chips, meat. Few hours. Smokey loveliness.
Took some chicken thighs, brined, cherry wood chips. 2hrs at about 225 with lovely smoke caressing them. Finished off with a slight lick of hickory brown cayenne bbq sauce over the coals. Awesome.
Served with grilled corn on the cob and a big helping of various leafs. Couple of cans. Yum
Also decided to be extra fat and bought ice cream today.
Chocolate, strawberry and banana with walnuts and pineapple chunks.
