It is a tough one as there is so many hidden gems over the years. However, I would probably have to go with Shawn Micheals vs The Undertaker from Wrestlemania 25. I know you said you were to pick one hitch wasn't really a classic match and this one is but I can't help it.
It's just an incredibly entertaining match.
The story, moves from each wrestler, uniqueness of it, the surprise nature of how good it was overwhelmed me. I couldn't believe how good it was. It was one of those matches that got your heart pumping, was one of those matches that if you were just a casual wrestling fan who only watches Wrestlemania got you hooked onto Wrestling. Being a huge HBK fan I was naturally cheering him but by the end I was left to just stand-up and applaud, cheer for both of them. Thanking them for this unexcepted classic 5-star match.
That is why my favourite Wrestling match of all-time goes to HBK vs The Undertaker at WM 25.

One of my faces was taker vs angle vs the rock at vengeance 2002! At the time I had just only got caught up in wwe and was ecstatic the rock won.. Having seen it again about 10 years later I still feel the buzz and appreciatIng how good taker and angle made the rock actually look considering it was his first match since wm18 against hogan.. Another one that comes to mind is the survivor series 2001, wasn't the greatest match but certainly felt like a lot was at stake when I was only 9 lol!
My favourite as a child was always wrestlemania 7 (I think) Hogan v Ultimate Warrior for both the World and Intercontinental championships
For me it has to be The British Bulldog & Owen Hart vs Fake Razor Ramon & Fake Diesel from 'In Your house 12'.
In absolutely every sense of the word, a bona fide classic.
I am also a huge fan of Yokozuna vs King Mabel from In 'Your House 4'.......
Two great workers in their prime.
Then again, Adam Bomb vs 'El Matador' Tito Santana from Raw Is War in '93 is right up there....
So many great matches. I cant decide.
Putting aside the above and in the spirit of going for underrated classics I have three which I cannot split.
Bret Hart vs Roddy Piper at Wrestlemania 8.
Shawn Michaels vs Diesel at In Your House 7.
Shawn Michaels vs Mankind at In Your House 10.
Apologies to the OP for the multiple entries however I can't sleep and now have great matches from yesteryear swirling around my head.
If this was thrown open to any promotion I would also add Booker T vs Scott Steiner from Spring Stampede 1999.
This is one of the few matches I would happily show a non fan and be proud of..
The bout is about as stiff as anything I can remember either before or since, the crowd is super hot and Scott Steiner is about as scary a heel as I have ever seen.

The Hart Foundation Vs Demolition - Sumerslam 90
It was 2/3 falls, demolition were the champions and there were 3 of them.......thats right, 3 of them. 2 of them looked similar and the other was alot taller. Demolition took the first fall and the harts took the next 2 winning the match with the aid of LOD who rumbled demolitions old switch-a-roo plan.
Don't really know why this sticks in my mind, but it was just so well put together.
If i remember right, the whole PPV was pretty sweet.
The survivor series where it was WCW/ECW vs WWE
Best storyline ever!

Barry Horowitz vs Body Donna Skip was the greatest feud.
^^ I'm really sorry but the 1885 Royal Rumble was the worst ever.. Closely followed by '96.

I dont remember the buildup or anything like. I was 7 at the time.
But im still a big HBK fan and it was the first time i saw someone win it after starting at number1.
So it stood out for me
