bigdumper,
as a curry eater for the last 20 years, at least once or twice a week, i can remember when the pathia was a relatively new dish on indian menus. a bit like the jalfrezi, it arrived as a fiery little number, rating as madras or just above madras heat. mind you, back then madras was a relatively spicy dish too.
i think over the years a lot of indian meals have toned down the spice levels, probably as curry became more popular and more familiar to people. in the old 5 star system, a madras would have been three stars and hot, and a vindaloo or equivalent dish would have been 4 stars and very hot. nowadays if restaurants still use a star or chili rating, three stars tends to be average at best.
am still a big fan of the pathia tho, it is one of the dishes i cook best myself and there are a few out there that can still provide the required spice and sourness. i find the best way to eat indian food is as a regular at a good restaurant or takeaway tho. there is one nearby that i have used for 15 years and after many long chats sat waiting for takeaways they know exactly the kind of food i like and will try new dishes out on me now and again as well.
all that talk of good foo has made my fruit and cereal lunch look pretty miserable so i think i may have to heat up some dahl instead!
I quite like the Rajput in Codsall
