Then it's overcooked and ruined. yes you need oil. but that alone won't do it.

Remove all scales. Dry the skin by running the edge of your knife along until all the water is removed from the skin. Finally a sprinkle of salt and after a minute, run your knife over once more to get the final drops of water out and remove the surplus salt.

Get you oil, real hot. lay the salmon skin side down. Don't move it after that. Watch the fish turn opaque until about 1/4 inch to go. flip over for 10 seconds.

Crispy golden skin and flesh still moist and not overcooked
