Over read hot embers on an oiled grill. Plenty of different types of wood to get your embers from, but vine cuttings are far and away the best down my neck of the woods.
Lob it on, give enough time to seal, flip, do the same, then flip every 30 seconds so the heat enters evenly from both sides.
Total cooking time depends on the width of the cut, but serve rare every time.

A misteak??
Steaks, have them out on the side for 30 mind till room temperature. I season with smoked paprika and garlic pepper.
Griddle pan, get it on the hob. No oil no nothing. Give it a two minutes.
Then add a very high smoke point oil. I use Groundnut. Once it starts smoking, drop on the steak. If you typically cook it for four minutes. Cook it 3 on one side, then flip it, just after it flipped then add the butter. Cook it for a min then rest it on the side. By adding the butter near the end of cooking it doesn't burn it.
Best steak you will have ever eaten.

Barbecue as and when weather permits.
Otherwise, red hot griddle pan; no butter but well seasoned both sides.
Sealed all round and then in the oven for 10mins. Back for a last minute on the griddle.
Medium rare to rare. Has to have a wee bit of red in the juices once rested for 20 minutes before carving.
I'm fwcking starving now
Well my scrambled egg on toast seems a very poor choice just now

Was at grill on the corner on Friday night.
Steak was amazing but everything else was poor
Sorry but that place has gown downhill over the last 18 months lauders.
Living on a false reputation nowadays.
Just done a couple of steaks tonight as well
Season with salt and pepper either side.
1 minute either side over a hot pan. Reduce to a medium heat and cook for 5-6 mins either side for two well done steaks
Served with a pepper sauce.

Mussels were poor.
I also got the surf Abe turf add on.
Baby scallops, prawns and crayfish. Defo frozen. Bland.
She added on green veg at £4... Boil in the bag effort.
Service was good if a little salesy. Steak was top notch. £103 quid worth it was not.
