How do you do your mash Igor?

I have a few but one I love and not my secret one is two cook the potatoes for about 10 then pour all but 4 cm of the water out and continue to cook on real low until ready.
Bring single cream 150ml to the boil.
Add 25 grams butter, salt, pepper to the the potatoes, break them up until lump free and only then add the cream and stir to a smooth consistency.
Now here is the crux, beat a couple of egg whites lightly and beat well with a wooden spoon until light and fluffy, don't worry the heat of the potatoe will cook the egg white.
Spring onion is a nice addition.

Lamb Mediterranean/merguez(spicy) mix sausage wrapped in pancetta bacon baked with red onion before you add the batter.
If using pork sausages add add apple with the onion.

Orr horseradish sauce, beautiful.
And btw, easy to their own but favourite blows all mash out of the water.

The BBC Amateur Masterchef is going to good fun this year. First challenge...mashed sp uds. Second challenge meat with a Mediterranean twist.
