Feel like Mbuemo would be a luxury signing. Would do alright at CF, but not really to the standard we need, in the summer we'd still need a CF and a LW.

he plays on the wing also and has 13 goals there

Right wing though, hasn't played LW once. So we'd still need a CF and a LW come summer.

we still need cover for Saka though

We do, but ideally we'd get a LW who can also deputize at RW, with Nwaneri as another option.
I like Mbuemo, but I don't see him as being a particular efficient use of what I imagine will be limited funds.

Mbeumo has operated mostly from the right this season (played about half a dozen games in a central role), but I'm pretty sure I've seen him deployed from the left in previous seasons for Brentford and he always caught my eye. He clearly has a well rounded skillset (dribbles well, links up play well, creates tons of chances) suited for playing all across the frontline. No one here doubts that Saka can play on the left if he wanted to. Mbeumo would be an excellent signing.
But it's all moot. No reason for Brentford to sell him mid-season.

Would he be at the level we need for any of the front 3 starters though? Wouldn't be better than Saka at RW, better options at CF, then LW I'm sure he could do a job but probably no better than Trossard there.
Like I say, I don't think he'd be a bad signing, I just don't think he makes sense in terms of prioritizing resources, unless we move on a couple of that frontline and replace them with one very versatile backup/rotation option in Mbuemo.

Mbeumo is definitely better than Trossard - dribbling, passing and creativity, workrate and intensity. He's simply much better rounded, though an in-form Trossard is the better finisher.
He won't be better than Saka at RW, but he can play there if Saka isn't playing, or play there when Saka gets a rest (Saka has been ridiculously overworked since his teens). He's also an option in the centre, either leading the line or just behind the striker. Mbeumo doesn't solve all our problems, but he solves a lot of them.
