So the ref is the official timekeeper, but he uses an unofficial timepiece to determine the official time of a game. Even though the literal definition of "official" is "relating to a position of authority"

It’s nothing to do with the watch being official or unofficial.

It’s about the time. There’s no official clock. No official time. The referee uses his tools, including his watch, and the margin for error is so small that it’s not a huge issue.

Except that with time wasting as it is, an official clock would actually be a good idea imo.

You have become muddled and forgotten the actual point. You’re now arguing the referee’s watch is an official timekeeping device.

But the watch(es) used to keep the time in a football game is not classified as official. It is just part of the compulsory equipment that the timekeeper (the referee) must provide.

The timekeeper nor the watch(es) he uses to keep the time are classified in the rules as 'official'.

Once you get your head around these simple pieces of information, things will become clearer for you. You are overthinking things.
