So if that trigger moment was the right circumstance and situation it might've just about worked - but they got that completely wrong. She won, they rung the bells, and she went mental anyway...... why?

There isn't a good reason at all. The day was won outright and Dany was all but Queen in name at that point. She should have been joyous, she'd finally reached the point she'd been preparing for her entire life.
Instead she goes on a mass murder spree killing thousands of innocents in one go. Just how evil and sadistic would a person have to be to do that ?? That's worse than any tyrant in GOT folklore that we know about.
We've seen Dany be cruel before but that was against those that opposed her or rejected her rule. The thousands of innocents in King's Landing were all ready to surrender to her including Cersei's army.
It's just inexcusably terrible writing.

It could have worked if they still had Rhaegal alive and then he was killed by someone like Euron after they had already surrendered.

I completely agree, which is why if they were gunna do it how they did (much too quickly) they needed to plant a seed in Dany's head that the people weren't worth saving and have it be triggered in the exact moment the bells were rung..... don't get me wrong it still would've been weak, but it would've at least given fans like Metro a solid argument.
Just before the battle she was considering storming the Red Keep and rationalizing those lost in the blaze as casualties of war, but she agrees to holt the assault if they surrender. In that scene they showed us that care for the people was still strong, though becoming strained by the desire for get the Throne at any cost.
As I said, I will credit the writers for at least trying here (unlike with TNK) but the execution was terrible.

I'm assuming that the writers intention here was that Dany is tormenting Cersei by letting her watch in horror as King's Landing get destroyed and knowing that she's next.
It just doesn't work on so many levels though. Firstly it gives Cersei much more chance to escape so it's a foolish move. As soon as she knew the navy was taken out she would have scarpered with her already in place escape plan.
Cersei has already shown she doesn't care what happens to the people of King's Landing, especially by using them as human shields. So watching the people get burnt up wouldn't have mattered much to her.
Also Cersei should have been watching that thinking this bltch is even crazier than me and there's no way she can become Queen now after this mass murder of thousands of innocents.
So in fact Cersei should have been watching that with a certain satisfaction knowing that Dany has totally facked her chances of taking the Iron Throne. And knowing that Dany will never be Queen like she was.

It's not that they weren't worth saving, it's that they were simply collateral in the fight for a greater future.
Harsh yes - but she's no butterfly. She burned people in their hundreds prior to this episode.
It wasn't collateral damage though, it would have been if she was killing soldiers who were standing next to civilians and they got caught in the crossfire, but she wasn't.
It was basically genocide as she was actively going after innocent civilians.

When Daenerys said that to Tyrion she was talking about the Red Keep where Cersei had let people enter in order to be unknowing human shields. She wasn't talking about the whole of King's Landing.
There's a big difference between killing some people who are inadvertently positioned where the Queen lives and intentionally killing the population of an entire city which Daenerys did.
And when Daenerys has killed people before it's because they've revolted against her or haven't accepted her as Queen. There's always been a legitimate reason. The people of King's Landing however were all ready to accept Daenerys and the army had even stood down for her.
There was absolutely no reason to kill them. It's inexplicable. Especially as it's ruined any chance of her becoming Queen after she totally had it in the bag when the bells started ringing.
Her greatest ever moment is realised and she goes on the biggest murder rampage in history killing thousands of innocent men, women and children. Doesn't make sense.
Any odds on who gets to kill/depose Dany in the final episode?
1) Varys' little spider is probably still monitoring Dany's mealtimes to the best of my knowledge. One little drop and no one will be the wiser.
2) A crossbow bolt from Tyrion or his part-time henchman Bronn. Highly unlikely, as the queen might probably have the treasonous imp executed within the first 15 minutes.
3) Arya - I was surprised to see her still hanging around King's Landing after the writers made a big show of her coming to terms with her vengeful story arc. But there has to be a reason she's still around.
4) Jon, for a mushy soap-opera ending.
5) A grief-stricken Brienne in the service of yet another Northern separatist movement.
6) Bonus - Bran wargs into some creature and takes Dany out.
It's gunna be Jon. 1000% sure it'll be him.
That's the reason Arya killed The Night King instead of him, can't have the two main villains taken out by the same person. And that'll be the so-called "bittersweet ending" they were promising.

What if Dany gets Drogon to burn Jon but he doesnt burn? Being a reborn Targaryen he cant be burnt.
